Payments for juice bars, from the press batch to the cleanse subscription

You buy by the case and sell by the ounce, and what happens in between changes with the season. A juice bar's whole margin lives in that conversion and in how fast the case turns.

The day, end to end

What a press schedule asks of the system

Six places a juice bar's numbers either hold or quietly drift.

The batch is the unit

Without the batch, the case looks full and the report cannot tell a flavour that sold out from one that was never pressed.

Yield that moves with the season

Costing against a fixed conversion is how a menu that worked in summer stops working in winter without anyone seeing it happen.

Boosters grouped by build order

Four add-ins printed as a flat list sends the maker back up the ticket. It is the same problem an espresso bar has, in a different sequence.

Cleanses as scheduled pickups

Sold as one large sale with a note attached, the pickups live in somebody's memory. That is where cleanse programs usually break.

Allergen flags at the blender

Two things must be unmistakable at the station: what is in the cup, and what it was made on.

Standing orders for studios and gyms

A regular Thursday delivery to a studio is a different motion from the counter, and it deserves its own workflow and its own invoice.

Buying guide

Before you sign anything for a juice bar

Seven questions worth asking any provider, us included.

  1. Can produced quantity be entered as a dated batch?

Ask what the case count looks like the morning after a press.

  2. Does inventory support a yield conversion you can change?

Seasonal means you will change it. Ask who can.

  3. Is modifier print order configurable?

Build your worst smoothie in the demo and read the ticket.

  4. Can one payment cover dated future pickups?

Ask to see the production sheet for day three of a cleanse.

  5. Where do allergen flags print?

    Production ticket, or nowhere useful.

  6. Does the system raise invoices for standing orders?

If not, your wholesale drops stay in a spreadsheet.

  7. What is the export when you leave?

Recipes, yields and program customers. Ask up front.

Questions

Juice bar questions we get asked most

How is a cold-press batch tracked once it is in the case?

As a produced quantity with a made-on date, not as an infinite item. Cold-press has a short sellable window, so the batch is the unit that matters: how many bottles came out of the press, how many sold, how many were pulled. Without the batch, the case looks full and the report cannot tell a sold-out flavour from one that was never pressed.

Why does produce yield matter more here than in most kitchens?

Because the input is bought by the case and the output is measured by the ounce, and the conversion between them moves with the season. A case of the same fruit yields differently in January than in July. Costing a juice against a fixed conversion is how a menu that worked in summer stops working in winter without anyone noticing.

How should boosters and add-ins be built so the blender station can read them?

Grouped by where they go in: base liquid, fruit, powder boosters, then finish. A smoothie with four add-ins printed as a flat list makes the maker re-read the ticket to find the order; grouped, it is one pass down the ticket. It is the same problem an espresso bar has, with a different sequence.

Can a multi-day cleanse be sold as a plan rather than as separate sales?

Yes, as an order with scheduled pickups against one payment. The guest buys the program, the pickups are dated, and the kitchen sees each day's collections on the production sheet. Selling it as one large sale with a note attached means the pickups live in someone's memory, which is where cleanse programs usually break.

Do nut milks and allergens need to be flagged on every build?

On every build where they are present, yes, and the flag has to be on the production ticket rather than in the item description. A blender is shared equipment and a substitution is a common request, so the two things that need to be unmistakable at the station are what is in it and what it was made on.

Tell us about your shop

Four fields. A person reads it, looks at what you are running now, and comes back with what they would actually change.

The promise

We will implement whatever is right for you — including keeping what you have. If your press schedule works and the only gap is batch dates in the case, that is one change to how items are entered, and nothing else needs touching.
